Starting a food truck isn't cheap, and anyone who tells you otherwise is selling something.

Here's what you're actually looking at:

The Truck

A used food truck in decent condition runs $20,000–$60,000. That's before you touch a single piece of equipment. Brand new? Add 40–60%. The condition of the mechanical systems matters more than the kitchen, a bad engine or transmission will eat your working capital fast. Always pay for an independent diesel mechanic inspection before buying.

The Buildout

Once you have the truck, you need to build the kitchen. Commercial-grade fryers, grills, refrigeration, ventilation, fire suppression, expect $15,000–$50,000 depending on your menu. If you're doing anything with serious heat (fryers, flat-tops), don't cut corners on ventilation. Health inspectors will make your life miserable if you do.

Permits and Licenses

This is where most first-timers get ambushed. It's not one permit, it's 5–8, and they come from different agencies at different levels of government. Budget $1,000–$5,000 for the permits themselves. Budget more for the time: in California, you're looking at 8–16 weeks to get permitted. In New York City, the mobile food vendor permit system is effectively broken, you need a workaround strategy before you spend a dollar.

Insurance

Commercial auto plus general liability is your minimum. In California and New York, expect $4,000–$9,000/year. In more operator-friendly states like Texas and Florida, you can get it done for $2,500–$5,500.

Working Capital

This is the category that kills people. You need at least 3 months of fixed costs sitting in the bank before you open. Commissary, insurance, any loan payments, you need to cover these while you're building a customer base. Plan for $5,000–$20,000 depending on your state and operating model.
